Natura-Beef

Our suckler cow herd lives in a large free-range barn. Whenever possible, we also take them to the pastures around our farm. The calves stay with their mothers from the beginning and drink their milk. At around 10 months of age, the young cattle are taken to the butcher.

Natura beef is somewhere between veal and beef in terms of taste and consistency. Due to its slow growth, it is tastier and loses less water.

We sell the meat in mixed packages, whereby the minimum order quantity is one-twelfth and thus about 12 kg. The package is divided into entrecôte, sirloin steak, filet, rump, meat cut into strips, minced meat, ragout, minute roasts, juice patties, knuckles, boiled meat, liver, and hamburgers. The price is 30/kg. You will receive the meat vacuum-packed (in portions for 2 - 3 persons) and labeled with the necessary details.

Order in writing by mail at info@mathis-hof.ch. You can pay in cash or against the invoice. New customers pay cash or by card for the first time.

Tips

  • The vacuum packaging means that the meat does not have to be frozen immediately, but can be stored in the refrigerator for around a week in its original packaging.
  • Freezing: We recommend a freezing temperature of -20C° degrees. (Freezer compartment in the refrigerator is not suitable).
  • Defrosting: Allow enough time for the meat to defrost. This will preserve the quality of the meat. We do not recommend defrosting in the microwave.
  • Preparation: The fine cuts (entrecôte, saddle of pork, fillet, plätzli) are particularly good if you use the low-cooking method (sear briefly in a pan, then leave to marinate in the oven at 75C° degrees for 20 - 30 minutes (depending on thickness).

History

In 2006 we decided with a heavy heart to switch from dairy farming to a suckler cow herd. Due to the sharp drop in milk prices and our small milk quota, we could no longer cover our costs. Little by little, we replaced our dairy cows with original Simmental mother cows. The father of all calves, a Limousin bull, is called "Pedro". He has been living with us since January 2020.
